Simple Roasted Sweet Potatoes:  When Energy Hits You

Grey paint chip samples have been sitting on my kitchen counter in a sad “to do” bin that has been overflowing for months now.  Yesterday, I decided to listen to this tremendous burst of energy that hit me, get off my ass and paint that grey onto my living room walls once and for all!  I have had a few days to stay in my pjs while catching up on house cleaning and summer sprucing.  It was high time to finish a project I had been thinking about for well over a year.  So, off I went to Home Depot for fresh paint and the grocery store for ingredients to make roasted sweet potatoes.

It was enough work for me to actually give a damn and put clothes on before leaving the house.  I didn’t really want to go out among society any longer than I needed to so, I called ahead to the paint department asking if they could whip up a gallon for me to swing by and grab in fifteen minutes.  I heard the sales woman say, “Hell no, bitch.  Come in here and wait like everyone else!” But what she really said was, “I’m terribly sorry but we don’t offer that service. You will have to come in and wait while we mix your paint.”  Whatever…

The good news was, I didn’t run into anyone I knew who would gasp at the sight of yesterday’s eyeliner smeared around my eyes and leg stubble if they stood near enough to see it all.  Like…when I’m off, I am OFF from all duties including self-grooming!  After a few minutes, I grabbed my paint and headed to check out all the while dreaming about how awesome the grey would look in contrast with my orange couch.

Lil' Rog

After a long day of painting, I felt so accomplished and special because I basically had a new living room.  I love that fresh feeling of something new in my environment.  Although, It took Lil’ Rog a few hours to adjust to the change.  For most of the day, he was sulking in my daughter’s bedroom wondering why mommy was moving all the furniture around.  By nights end, he was over it and ready to enjoy popcorn and a movie while Brandon and I ate a bowl of whole wheat spaghetti and simple roasted sweet potatoes.  It was such a perfect end to our day.  Next project: the dining room!

Ingredients

Scale
  • 1 sweet potato
  • 1 bunch fresh broccoli
  • 2 tbsp extra virgin olive oil
  • 1 tsp steak seasoning (or other favorite seasoning)
  • kosher salt (to taste)
  • fresh cracked pepper (to taste)

Instructions

  1. Preheat oven to 350 degrees.  
    Leaving skin on, cut sweet potato into 1/4 inch cubes.  Set aside in a medium mixing bowl.  Cut broccoli into smaller florets and add to mixing bowl.  Add olive oil, seasoning, salt, and pepper then toss with fingers.  
    Spread veggie mixture onto a baking sheet lined with parchment paper.  Roast in oven for 20 minutes or until crispy brown.  Remove from oven and serve on top of pasta, mixed into salads, or as a side dish.
