Rosemary Lemon Cake For Sansa

Rosemary Lemon Cake For Sansa

Sunday’s Game of Thrones season premiere is right around the corner!  Brandon and I have been hurriedly re-watching the series before the big day.  It is crazy how much stuff I had forgotten that happened over the last seven seasons.  The one thing that has sunken into my heart, with much pain, is the sad and tragic life Sansa Stark has lived.  If she were my friend, I would make her this delicious Rosemary Lemon Cake to ease her pain from all the bad shit that has happened to her.  Let us recap on the craziness…

Sansa is forced to become engaged to the biggest creep in all the land at a very young age. She gets roughed up by said creep.  Then, after getting duped by him, she is then forced to wed the imp.  THEN, after receiving help from Littlefinger to escape King’s Landing, she ends up in the cold and heartless arms of Ramsey Bolton.  Like, what in the fuck, people!?!?!  Can this poor young lady not get a break?

Rosemary Lemon Cake makes everything better…

The only thing I can think of doing for this poor girl is to make her favorite cake to ease her life full of anguish.  And even though she cannot truly eat the cake (because she’s just a character), I can certainly eat it for her.  I am here for you, girl.  Furthermore, I am here to tell you that it is going to be alright, Sansa.  It will all be alright in the end.

Things I am hoping will happen in the final season of GOT…

Who I want to die:  I know, I know.  That is such an evil want to have but, for real, these folks deserve what they have coming to them!

  • Cersei (for obvious reasons):  That pile has lasted way too long in this series!  It would be awesome if Arya is the one who will get to kill her.
  • Robin (the 14 year old breastfed creep):  I cannot imagine his existence being of any use or benefit to anyone.
  • Melisandre:  No one should be allowed to live after orchestrating the death of a young innocent princess by fire….oh and her small nipples freak me out so, she has got to go!
  • Ellaria:  I don’t think she will ever receive enough satisfaction of revenge for the loss of her dude.  She, too, has to go!

What I want to happen in the end:

  • If Arya doesn’t get to kill Cersei, please let the fatal blow be from Jaime.
  • I hope Theon kills Euron because he really needs to feel “whole” and brave again.
  • It would be awesome if Jon or Dany kills the Night King and then, go off to rule all kingdoms together as a family.
  • Please please PLEASE let Tormund and Brienne get busy!!!  They are soon MFEO

What are all of you hoping and wishing for this last season?  Please share in the comments!

This cake will satisfy that sweet tooth of yours!  The aroma of rosemary and lemon as it bakes will put a huge smile on your face too!  Another variation of this recipe can include fresh blueberries with poppyseed sprinkled on top.

  • Total Time: 50 minutes
  • Yield: 6 1x

Ingredients

Scale

Dry Mixture:

2 cups all-purpose flour

3 tsp baking powder

1/2 tsp salt

Wet Mixture:

1 cup sugar

1 cup unsweetened almond milk

1/2 cup vegetable oil

1/4 cup lemon juice

1/2 tsp salt

3 tbsp lemon zest

1 sprig fresh rosemary, leaves removed and roughly chopped

1 tsp vanilla extract

For Lemon Glaze:

2 cups powdered sugar

4 tbsp lemon juice

more zest for garnish

Instructions

Preheat oven to 350 degrees.  Mix dry ingredients in a small mixing bowl.  Mix wet ingredients in a medium bowl.  Slowly add dry mixture to the wet mixture in small batches, stirring until fully incorporated and smooth.  Add chopped rosemary to batter and stir.

Spray your cake pan with avocado oil and then dust lightly with flour.  Pour cake batter into cake pan and level out with rubber spatula or tap edges.  Bake in oven for 30-35 minutes or until a toothpick poked into cake comes out clean.  Set aside to cool.

Add powdered sugar and lemon juice together in a small bowl and mix until smooth.  Pour over cooled cake and serve.
