Ingredients

  • 1 sweet potato
  • 1 bunch fresh broccoli
  • 2 tbsp extra virgin olive oil
  • 1 tsp steak seasoning (or other favorite seasoning)
  • Kosher salt (to taste)
  • Freshly cracked pepper (to taste)

Instructions

  1. Preheat oven to 350 degrees.
  2. Leaving skin on, cut sweet potato into 1/4-inch cubes. Set aside in a medium mixing bowl.
  3. Cut broccoli into smaller florets and add to mixing bowl. Add olive oil, seasoning, salt, and pepper then toss with fingers.
  4. Spread veggie mixture onto a baking sheet lined with parchment paper. Roast in oven for 20 minutes or until crispy brown.
  5. Remove from oven and serve on top of pasta, mixed into salads, or as a side dish.
