Roasted Carrots with Garlic Dill Sauce

Carrots are one of the most beautiful and delicious vegetables, in my opinion.  Anytime I see a bunch of tri-color carrots in the produce section, I grab them up because they make me feel like I am cooking fancily.  This particular bunch gave such a gorgeous aesthetic to my recipe for Roasted Carrots with Garlic Dill Sauce.  Not only are they lovely in color, they are sweet and delicious in taste.  If you are looking for an easy side dish for your holiday table, this is a winner!

Tri-Color Carrots

Funny story…back in my catering days, I had ordered a slew of mini tri-color carrots for a wedding buffet display.  I mean, these beautiful bitches had come all the way from California!  No expense was spared, I’m telling you!  Anyway, I cannot stress just how proud I was of these carrots.  I was on cloud nine because my buffet table was the most beautiful in all the land…until this cowboy came and asked me if they had gone bad.  I asked him why he thought they were bad.  His reply was, “…these ain’t the right color!  These ain’t natural!  They done gone bad.”

My sighing, eye-rolling and face-palming ensued, it was easier for me to just walk away than explain to him the possibility of change and new experiences did in fact exist.  Thirty minutes later, was that fool back at the Crudité and dip station?  You bet your ass he was.

Roasted Carrots with Garlic Dill Sauce

What can be better than roasted carrots, garlic, and dill all rolled up into one yummy dish?  Well…a lot BUT, this recipe is so delicious, it will be a favorite addition to your Thanksgiving feast.

  • Total Time: 40 minutes
  • Yield: 4 1x

Ingredients

Scale

1 bunch tri-color carrots, tops removed and saved for other use (pesto for example)

1 tbsp olive oil

salt and pepper for seasoning

1 tbsp vegan butter

2 tbsp fresh dill, finely chopped

1 tbsp olive oil

1 tbsp brown sugar

Instructions

Preheat oven to 350 degrees

Slice carrots lengthwise.  Place onto a baking sheet lined with parchment paper.  Toss with olive oil, salt, and pepper.  Roast in oven for about 20 to 30 minutes or until carrots are soft.  Check for doneness with a small paring knife.  If it goes in rather smoothly, then your carrots are ready.  Remove from oven and serve onto platter.

Place a small sauté pan over medium heat and add butter.  Once it has melted, add olive oil, dill and garlic.  Working quickly, sauté for a few seconds being careful not to burn the garlic.  Add the brown sugar and stir to combine.  Once the sugar has melted, pour mixture over carrots and serve.
