Roasted Carrots with Garlic Dill Sauce

What can be better than roasted carrots, garlic, and dill all rolled up into one yummy dish?  Well…a lot BUT, this recipe is so delicious, it will be a favorite addition to your Thanksgiving feast.

Ingredients

1 bunch tri-color carrots, tops removed and saved for other use (pesto for example)

1 tbsp olive oil

salt and pepper for seasoning

1 tbsp vegan butter

2 tbsp fresh dill, finely chopped

1 tbsp olive oil

1 tbsp brown sugar

Instructions

Preheat oven to 350 degrees

Slice carrots lengthwise.  Place onto a baking sheet lined with parchment paper.  Toss with olive oil, salt, and pepper.  Roast in oven for about 20 to 30 minutes or until carrots are soft.  Check for doneness with a small paring knife.  If it goes in rather smoothly, then your carrots are ready.  Remove from oven and serve onto platter.

Place a small sauté pan over medium heat and add butter.  Once it has melted, add olive oil, dill and garlic.  Working quickly, sauté for a few seconds being careful not to burn the garlic.  Add the brown sugar and stir to combine.  Once the sugar has melted, pour mixture over carrots and serve.
