It is no secret. I use this damn beef recipe on EVERYTHING. It is just so good and so versatile. Earlier in the week, I had shared a few recipes about avocados and tomatoes using the beef mixture. This is the same one! I just served it up in a taco salad! If you are a busy person, you can make a huge pan of it and keep it in the fridge to use for baked potatoes, salads, lettuce wraps and burritos.
Taco Salad with Pomegranate Seeds

1 large yellow heirloom tomato, chopped
1 head romaine, chopped
1 tbsp pomegranate seeds
1 tbsp pepita seeds
1 avocado, sliced
black corn chips
Prepare beef recipe then arrange on a salad plate or bowl with remaining ingredients. Serve with tomato salsa or a squeeze of lime.
